Grilled Peach Crisp

Summer means HOT where I live and that is not conducive to cooking indoors, especially anything involving the oven so I am going to make this the summer of grilling everything outdoors! I have a nice collection of cast iron cookware, mostly from my grandmother (amazing cook) so I’m hoping to channel her skills as I explore the world of cast iron grilling😃.

539182D2-6D54-4B4C-AE62-5DE161E80150I had an abundance of early peaches this year and wanted to make a peach crisp but no way was my oven getting turned on!  I’ve been grilling flatbread pizzas weekly this summer (see my posts from July 2017) so grilling was on my mind and so was a fresh peach crisp… you see where this is headed, right?

AED0E478-EE78-4DC1-AF3D-1B4B6B7480E7I have now made four different grilled peach crisps and every one of them has been delicious so I am sharing this recipe which can be made gluten-free by using oat and/or almond flour (a mixture of the two is best) instead of whole wheat flour. I also made a vegan version with all coconut oil and another one with half butter and half coconut oil and each one was great so you can easily adapt this to your dietary preferences! It really is fool-proof. On my second one I thought I had turned the burners off on my gas grill and was going to let it cook a few more minutes with no flame but it was, in fact, on low not off, and I forgot about it (hey, it’s summer and I’m a teacher so my brain is off-duty) so the crisp ended up cooking another 20 minutes and it was still delicious. The peaches were just cooked down more, but the topping was NOT burnt even a little bit. My point is, cast iron is the most forgiving cookware and things just don’t burn as easily as glassware in an oven. So get out of the hot kitchen and fire up your grill! 👍

RECIPE for GRILLED PEACH CRISP

Ingredients (for 9” cast iron pan)

  • 3-6 cups peeled and sliced fresh peaches (amount depends on size of your cast iron pan-I used about 3 cups in a 9” square pan and 6 cups in a big 12” round skillet)
  • 1 tsp vanilla extract
  • 1 TBSP lemon juice
  • 1-2 TBSP sweetener (honey, agave, coconut sugar, or brown sugar) OPTIONAL
  • 1-2 TBSP cornstarch (depending on how juiciness of peaches)

Topping

  • 1/2 cup regular oats
  • 1/2 cup Granola (your favorite or homemade)
  • 1/2 flour of your choice
  • 1/3 cup soft coconut oil and/or butter or combo of each
  • 1/8 cup sweetener (honey, maple syrup, coconut sugar or brown sugar
  • 1 TBSP Cinnamon (less if you don’t love it)

DIRECTIONS

Turn on your grill to medium flame and close the lid. If you have a thermometer you want it to be at about 325-350 degrees when you add the crisp. If no thermometer just preheat about 15 minutes.

For Peaches

  1. Peel, remove pits and slice peaches, place in medium bowl.
  2. Add lemon juice, vanilla, cornstarch and sweetener of choice, toss gently and set aside.24ED33AC-6147-4A49-BE36-7EB111328106
  3. In large bowl, stir together, oats, granola, cinnamon and flour.
  4. Add sweetener and mix well.
  5. Mix in the oil/butter, using your hands to blend it into the dry ingredients until they are coated. It will be like moist soil. Yum!87AF75DE-2300-4E2F-8DA3-4CF1E178845F
  6. Oil your cast iron pan with coconut oil, including the sides.  Pour the peaches into the pan and spread evenly. 

  7. Pour the topping in an even layer over the peaches. They should be completely covered.
  8. Place the pan onto your grill in the center and close the lid. Cook for about 30 minutes, checking after 15 -20 minutes. Depending on your grill’s temperature it can take 30-45 minutes.   9. Remove your crisp and let cool for at least an hour. Remember, cast iron holds heat for along time so be careful not to touch the pan until it cools! 

  10. Serve this by itself, with a dollop of freshly whipped cream (coconut cream for vegans) or for real decadence, a scoop of vanilla ice cream😋.
