Our Farmer’s Market just opened this past weekend so I headed down to get a 5 lb. box of fresh blueberries. They are only locally in season a short time so I like to freeze what I haven’t devoured, though the first box rarely makes it into the freezer. I’ll be back for more next week 🙂
I am devoting the next few posts to blueberries, of course, starting with my very first attempt at a smoothie bowl. They are all the rage these days, so had to create one just for fun. I don’t normally have time for all the fancy decorative garnishes but it really satisfied my internal creative foodie side. Feel free to add your own garnishes.
BLUEBERRY MANGO SMOOTHIE BOWL
(makes enough for 2 servings)
Ingredients:
½ cup plain organic Greek Style Yogurt (or substitute ¼ – 1/3 cup of raw cashews for vegan version)
¼ cup coconut water
¼ fresh orange juice
Handful frozen strawberries
½ banana
1/3 cup fresh or frozen mango
½ cup fresh or frozen blueberries
½ cup kale
1 TBSP chia seeds
Directions:
Blend all the above in a blender. Pour into a bowl and top with any of the following:
Sliced almonds
Shredded coconut
Banana slices
Fresh blueberries, strawberries and mangoes
Chia seeds
Garnish with fresh mint
Full of vitamins, minerals, calcium, protein and fiber and sooo delicious. Great way to start your day 🙂
