“Here’s to Eating Breakfast”

“Easy, Healthy Start to the Day”

EVERYBODY says it is important to eat breakfast, but I am not hungry early in the morning and preparing food as I am getting ready for work has not been a priority (15 extra minutes of snuggling in bed is a priority, however.) I am happy to say I have come up with something that is super easy, very healthy and can be eaten immediately or in the car on the way to work (I know, distracted driving is bad), or just before all the children arrive for class, or a bit later, or…. Oops… now it is no longer breakfast, is it? It’s so simple probably lots of people are already eating this, but since I am new to breakfast I feel like I invented it!  The best part is it is requires NO COOKING and can be assembled the night before if one is that organized! Plus, it is good for you.

“Ingredients for a healthy breakfast parfait”

INGREDIENTS:
1. 1 cup or so of your favorite plain yogurt (if you hate plain yogurt, try adding a bit of maple syrup to it, much better than the flavored kind that have SO MUCH sugar) – you could also make it with kefir but that is a bit too runny for me and harder to eat in the car.
2. Fruit in season. Right now, fuyu persimmons and pomegranate are my favorites, but ANY fruit would be fine.
3. Chia seeds – 1TBS
4. Flax seeds, or ground flax – 1 TBSP
5. 1/3 cup granola (sometimes I make my own or buy the kind with not much sweetener)
Optional: 1 teaspoon cinnamon, ½ teaspoon vanilla, 1 TBSP maple syrup

” Pomegranates, Fuyu Persimmon, Granola”

DIRECTIONS:
Put the plain yogurt in a container with a lid. Stir in optional ingredients if you are adding any, then the chia seeds and flax seeds and finally the fruit. Top with the granola if you are eating it immediately; otherwise, put the granola in a small container to add just before eating so it stays crunchy, unless you prefer it to get soft in the yogurt.

  1. Glad you like it 🙂 Make sure you get Fuyu (they are firm and soooo good) and not Hashimas (they are soft and squishy and mostly just for baking)!
